What is IEKEI?

IEKEI Ramen was born in 1974, Yokohama Japan. The world IEKEI translates directly to house-style ramen. The house signified which ramen house the style originated from. Is was a signature to show which ramen sect the ramen shops flavor came from. The IEKEI style is characterized by medium to thick noodles with pork and chicken bone broth with the base of soy sauce tare. Tare is the concentrated sauce that gives all ramen types their signature flavor. The toppings are unique compared to traditional ramen. Spinach, roasted pork belly (chashu), seaweed and green onions or a seasoned egg depending on the house. In Japan, the flavors are customizable with the amount of taste concentration, fat oil, hardness of noodle and toppings.​ ​

Made in-house

Custom made noodles

All noodles are custom made at our factory. Three different types of Australian prime wheat flour is used to create our distinct texture and various blending ratios will be used depending on the type of noodle that is desired. Since the IEKEI style ramen requires the broth to be picked up with the noodles, we use the process of aging to create the elasticity that we require for IEKEI and its thick noodles.

Tare (concentrated sauce)​ ​

A IEKEI ramen born in Yokohama in 1992. A secret sauce created by a store owner who trained at a famous store in the IEKEI after various trials and errors to surpass the teacher. Based on carefully selected soy sauce based on carefully selected soy sauce, it is carefully ignited and aged to bring out the full flavor and finish with a deep and punchy sauce. This is a special sauce that has a perfect compatibility with thick soup.
